Lazy Jambalaya…in 30 minutes or less

One of my favorite southern dishes is a classic, New Orleans Jambalaya  Unfortunately for a 9-5 mom I rarely get to make it because it takes so long to make. At best I’ll only be able to mix up a pot of Jambalaya once or twice a year because to make it authentic, you’ll practically need all day to cook it…and seriously, who has that kind of time? Recently I’ve began experimenting with adding seasonings and different ingredients to the premade box Jambalaya mixes. Usually I stay as far away from boxed food as possible, but this recipe is probably the closest i’ve come to real Jambalaya that can be cooked in 30 minutes.

 


Fijian Island Favorites

The local people of the Fijian islands typically make food that can be eaten without silverware or other utensils. Pillows and mats are used for sitting during meals instead of chairs and the whole meal is worlds apart from a typical American dinner table. Their dishes are typically made up of brown rice, root vegetables like potatoes and turnips, coconuts and various types of fish. Fiji is also highly renowned for its extremely pure water aquifers. Fijian artisanal water is sold all around the world.
The way traditional Fijian food is prepared is very unique to the area. The Fijian “Lo-vo” or clay oven is very common for preparing meats, fish and other dishes. Typically the food is buried in a large clay pot a few feet underground, and covered with hot stones so that the ground itself acts like a large oven, cooking the food inside the pot. It usually takes quite a while to cook in a clay oven, but more stones can be added to the ground to speed up cooking times. Lo-vo festivals and feasts are very popular in the Fijian islands. Typically, meats such as chicken and fish are cooked along with turnips and plantains to slow-cook in the pot. The raw foods are wrapped in aluminum foil or banana leaves to absorb and distribute heat evenly. Lo-vo festivals are most often held in the resort towns of Fiji. Weddings are also another very popular time for Lo-vo feasts.


Filipino Chicken – Adobo Style!

This is a wonderful dish that we picked up in our travels to the islands. The preparation is simple and it doesn’t require strange or indigenous ingredients that you’ll need to go searching for. Will feed 4-6.

Ingredients
½ cup of white vinegar – Red or white wine vinegar will work just as well.
1 pinch of salt
3-4lb of chicken – we suggest bone-in chicken thighs for this recipe although breast meat or drumsticks are fine.
7 cloves of minced garlic
¼ cup of soy sauce
1 tsp. freshly ground black pepper
1 T Olive oil
1 Minced Shallot
1 Chili pepper – your choice of mild or spicy, although spicy is more authentic.
2 Bay leaves

I bought my Nokia 6220 Classic navigator a few days back and I must say it is an excellent communication device with  a really cool music player. Recently Nokia and Vodafone has announced the launch of their new and exclusive Nokia  6730 Classic giving access to full range of Vodafone services.

Nokia 6730 Classic is a featured packed mobile that offers Mobile internet, Vodafone Music Client and personal and  business email access along with mobile navigation capabilities. It utilises S60 software which allows customers to  download their choice of additional applications from the web.

Menton Lemon Festival France

Menton is the lowest level of administrative division in the French Republic located on the Franco-Italian border, within the confines of the Côte d’Azur and the Ligurian Alps. It is well known for its warm micro-climate favorable to lemon, tangerine, and orange groves.

It was pretty popular for its Menton’s February Festival which initially started at the end of the 19th century. People still find it very exciting and fun. The festival is enjoyed for three whole weeks along with a daily Citrus Exposition, parades on Sundays,Corsos Nocturnes with fireworks on Thursday nights, and Jardins de lumières on Fridays.
